9. Acorn Squash and Kale Over Penne
If you’re short on time, this recipe takes less than half an hour to make. Cubed and peeled acorn squash is softened in the microwave for seven minutes. It’s then added to a Dutch oven with sautéed garlic, kale, vegetable broth, and spices. The last thing that’s left is the penne pasta, which is added to the mix and sprinkled with shredded Parmesan cheese. Super easy, and you probably already have all the ingredients to make this healthy pasta dish!
