5. Curried Chicken Thighs with Cauliflower, Apricots and Olives
Marinating the chicken for at least eight hours overnight is key to this recipe. A take on the famous Chicken Marbella recipe from The Silver Palate cookbook, this version replaces prunes with tangy apricots. Curried cauliflower, olives, and apricots are baked at 450 degrees and then covered with the marinated chicken. Served with cilantro and lemon wedges.
