25. Tom Collins
The Tom Collins is a classic cocktail written by Jerry Thomas in 1876 made with gin, sugar, lemon juice and carbonated water.
- 2 oz gin
- ¾ oz fresh lemon juice
- ½ oz simple syrup (one part water, one part sugar)
- 2 oz club soda
- 1 lemon wedge
- Combine gin, lemon juice and simple syrup in a cocktail shaker with ice and shake.
- Strain into a chilled highball glass with ice.
- Top with club soda.
- Garnish with lemon wedge.
