The Tom Collins is a classic cocktail written by Jerry Thomas in 1876 made with gin, sugar, lemon juice and carbonated water.

Ingredients:

  • 2 oz gin
  • ¾ oz fresh lemon juice
  • ½ oz simple syrup (one part water, one part sugar)
  • 2 oz club soda
  • 1 lemon wedge

Directions:

  1. Combine gin, lemon juice and simple syrup in a cocktail shaker with ice and shake.
  2. Strain into a chilled highball glass with ice.
  3. Top with club soda.
  4. Garnish with lemon wedge.
