4. Creamy Spinach and Mushroom Lasagna
Lasagna has always been a traditional leftovers meal, but here’s a new spin on an old favorite. This meatless Creamy Spinach and Mushroom Lasagna utilizes a mushroom cream sauce base in addition to ricotta and Parmesan cheese. The mushroom sauce is layered with lasagna noodles, cheese, and spinach and stacked times three in a baking dish. It’s then as simple as placing it in the oven and baking for 35-45 minutes. Freezable for up to 3 months and is even better the second day as leftovers!
